I prefer to sell based on split side
or sides of beef. A split side is equivalent to 1/4 of all the cuts from a beef. So a person would get 1/4
T-bones, hamburger, sirloin, and so forth. A side is 1/2 of all the cuts
from an animal.

Customers requesting
specialty items such as purchasing just sirloin, t-bone, rump roast,
and etc. are encouraged to order. Only the meat will be priced in
relationship to the value of the cut. Contact Baker Beef for pricing and
availability of certain cuts. Prices stated are for cut and
wrapped meat in freezer paper. Delivery is NOT included unless the
purchaser is located in the following areas where Baker Beef will
deliver the meat at a much cheaper cost: Denver, CO and surrounding
areas, Lincoln and Omaha, NE area, or a four hour drive from Trenton NE.
Delivery to these areas will be cheaper than UPS.
Large purchases ( a 1/2 or more) will be delivered at a reduced costs
personally by me but must consist of more than a 1/4 animal. Everything
else will be shipped via UPS at the purchaser’s cost.
Estimated amount of beef to be expected: A 1300 lb. steer generally
will produce 61% (793 lbs) of hanging meat to be processed and trimmed
to 560lbs of edible meat. A quarter will produce around 140lbs of edible
meat.
Of the processed meat:
 | 25-28% steaks (sirloin, ribeye, and t-bone) |
 | 35-38% roasts (sirloin tip, chuck, and rump) |
 | 35-38% hamburger |
